Professional Cookery & Hospitality

During the course candidates will be expected to answer underpinning knowledge questions relating to the foundation theory units for advanced skills in fish and shellfish cookery, advanced skills in poultry and advanced skills in meat preparation and cooking.

Other units include preparation and cooking of advanced shellfish dishes, vegetables and hot sauces.

All theory relating to preparation and cooking of these items will be covered and candidates will be expected to answer theory underpinning questions successfully to pass these units. Reading and research will be required.

  • Entry requirements

    The City and Guilds Level 3 NVQ Diploma in professional cookery (7133) requires the student to be qualified to a 2 Diploma in food production or a level 2 Diploma in Professional Cookery.

  • Who is the course for?

    This course is for learners that have completed Level 2 Professional Cookery, that want to progress into a senior level of employment with in the hospitality and catering sector. The skills learnt should make the candidate a more confident, capable, and a proficient team member of any catering and hospitality team.

    Theory is assessed using underpinning test and practical is assessed in formative and summative assessments.

    Level 3 Diploma in Professional Cookery will support you'll develop vital skills in food safety and hygiene and teamwork as well as a range of practical units anything from cooking shellfish dishes to complex meat dishes.

    Working full time in a professional kitchen as a Commis Chef, Demi Chef or Chef de Partie. Can increase their supervisory skills by taking Level 3 Award in Hospitality Supervision and Leadership Principles Level 3 Diploma in Hospitality Supervision and Leadership.
